Like to eat eggs for breakfast but get tired of scrambled eggs and omelets? Egg muffins are the way to go. This recipe makes 10 egg bites so you have a week’s worth.

Not only does the cottage cheese add protein, it creates a creamy, light texture and helps keep the muffins from drying out.

Ingredients

  • 6 Large Eggs
  • Cottage Cheese– for best flavor use full fat (4%) or 2%. It doesn’t matter whether you use large curd or small curd.
  • Salt and Pepper
  • Feta Cheese
  • Steamed Broccoli
  • Minced Onion

Equipment Needed

How To Make Air Fryer Cottage Cheese Egg Muffins

  • Blend. Place eggs, cottage cheese, and salt and pepper in a blender and blend for 20 seconds.
  • Mix. Pour into a bowl and add feta cheese, broccoli, and onion.
  • Transfer to silicone molds. Divide egg mixture between 10 silicone molds that you have lightly sprayed with cooking spray.
  • Air Fry. Air fry for 9 to 11 minutes.
  • Let cool. Let cool a few minutes before removing from silicone cups.

Variations and Substitutions

  • Use goat cheese instead of feta cheese or half a cup of shredded cheddar cheese.
  • Add some spice. Add 1 minced jalapeno pepper or a pinch or two of cayenne pepper.
  • Steamed asparagus can be used instead of broccoli.
  • Use green onion in place of yellow onion.
  • Add some cooked and crumbled bacon, some sausage or diced ham.

  • Let cool in molds for a few minutes before removing.
  • Air fryer cooking times vary greatly between different brands and models so use the cooking time as an estimate.
  • Be careful not to overcook or the egg bites will be tough and rubbery.
  • Do not crowd the air fryer basket. Air fry in batches if necessary.

Storage and Reheating

These egg muffins keep wonderfully and are great for meal prep. Leftovers will keep in an airtight container in the refrigerator for 4 to 5 days and can be reheated in an air fryer or microwave. Can be frozen for up to 3 months.
