Air Fryer Chocolate Zucchini Bread- these mini loaves are a breeze to make with a crispy exterior and a moist, chocolaty interior. This richly flavored zucchini bread is perfect for breakfast, a dessert, or snack.

Recipe Yield

This recipe makes 3 mini loaves. Eat one now and freeze 2 for later. I use these mini loaf pans and I can fit two at a time in my Cosori Air Fryer.

How To Make

  • Whisk together the dry ingredients.
  • Whisk together the wet ingredients.
  • Mix together. Add dry ingredients to wet ingredients and stir just until combined.
  • Add zucchini and chocolate chips and stir.
  • Transfer batter to loaf pans. Spray the pans first with baking spray with flour.
  • Air fry 20 to 25 minutes.

Air Fryer Cooking Times Vary

Use the air frying time as an estimate. Different brands and models cook at very different rates. Check early. The top may get done before the middle gets done in which case you need to place foil over the tops of the pans.

Use the toothpick test to tell if they are done. Insert a toothpick in the center. If it comes out clean or with only a few crumbs attached, it is done.

Variations

  • Add half a teaspoon of ground cinnamon.
  • Add half a cup of chopped walnuts or pecans.

Recipe Tips

  • Squeeze the zucchini dry in paper towels. Zucchini have a very high water content and if you don’t squeeze the water out, the liquid to dry ingredient ratio will be off.
  • Do not overmix the batter. Overmixing can make the bread tough.
  • No need to preheat the air fryer unless your model requires it.
  • Don’t overfill the pans. Leave room for the bread to rise. You should only fill them about 2/3 full.

Storage

Can be stored at room temperature in an airtight container for 3 to 4 days or frozen for up to 3 months.

Materials

  • 1 cup all-purpose flour
  • cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • cup packed light brown sugar
  • 4 tablespoons butter, melted
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • cups shredded zucchini, squeezed dry in paper towels
  • ¾ cup semi-sweet chocolate chips

Instructions

  • Whisk together first 5 ingredients in a medium bowl.
  • In a large bowl, whisk together eggs, sugar, butter, vegetable oil and vanilla extract.
  • Add dry ingredients to wet and stir just until all the flour is moistened.
  • Stir in zucchini and chocolate chips, reserving about ¼ of chocolate chips to sprinkle on top.
  • Spray 3 mini loaf pans with baking spray with flour.
    Divided batter evenly between loaf pans. Sprinkle the save chocolate chips on top.
  • Place in air fryer basket and air fry at 320 degrees for 20 to 25 minutes.

Notes

Don’t overfill the pans. Leave room for the bread to rise. You should only fill them about 2/3 full.
If top starts to get too brown before the center of the bread is cooked, place aluminum foil on top of the bread.
