- 1 cup all-purpose flour
- ⅓ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- ⅔ cup packed light brown sugar
- 4 tablespoons butter, melted
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 1½ cups shredded zucchini, squeezed dry in paper towels
- ¾ cup semi-sweet chocolate chips
Whisk together first 5 ingredients in a medium bowl.
In a large bowl, whisk together eggs, sugar, butter, vegetable oil and vanilla extract.
Add dry ingredients to wet and stir just until all the flour is moistened.
Stir in zucchini and chocolate chips, reserving about ¼ of chocolate chips to sprinkle on top.
Spray 3 mini loaf pans with baking spray with flour.Divided batter evenly between loaf pans. Sprinkle the save chocolate chips on top. Place in air fryer basket and air fry at 320 degrees for 20 to 25 minutes.
Don't overfill the pans. Leave room for the bread to rise. You should only fill them about 2/3 full.
If top starts to get too brown before the center of the bread is cooked, place aluminum foil on top of the bread.
