How To Serve Air Fryer Jiffy Corn Muffins

These easy corn muffins are wonderfully moist and sweet and go great with a bowl of 5-Alarm Chili or Rotel Chili. They also go well with Southern Cabbage. Slathered with butter, honey, or jam they make a great snack or addition to breakfast.

Ingredients Needed

  • 1 Box Jiffy Corn Muffin Mix
  • Milk
  • Egg
  • Melted Butter

Equipment Needed

  • Silicone Baking Cups– I love using silicone baking cups in my air fryer. They are reusable and easy to clean. You can make muffins, cupcakes, or egg muffins in them.
  • Air Fryer– I currently use both the Cosori 5.8-quart Air Fryer and the Instant Vortex Plus 10-Quart Air Fryer.

Recipe Tips

Use the air frying time as an estimate. Different air fryer models and brands cook at different rates.

If your air fryer blows heat directly down on the food, the tops may get browned before the inside is cooked. If that is the case, loosely cover them with foil the last few minutes of cooking.

This recipe makes 6 corn muffins. You can easily double the recipe, but you may need to cook the muffins in batches.

Variations

Add crumbled cooked bacon or half a cup of shredded cheddar cheese to the batter for some more savory flavor or add half a cup of blueberries for some more sweetness.

How To Store

They are best eaten the day they are made but they can be stored in an airtight container at room temperature for 3 days or frozen for up to 2 months. To freeze wrap in plastic wrap and place in a freezer bag.

  • 1 large egg, lightly beaten

Instructions

  • Spray 6 silicone baking cups with cooking spray.
  • Combine all ingredients in a mixing bowl and mix just until combined.
  • Divide batter evenly between the baking cups.
    Place in air fryer basket.
  • Air Fry at 320 degrees for 7 to 10 minutes.
