Air Fryer Muffins

Homemade muffins are so quick and easy to make. Until recently, it never occured to me to make muffins in an air fryer. But it totally works and is so easy. Plus, it’s really convenient. No need to wait for the oven to preheat.

Small Batch

This recipe makes a small batch- 6 muffins. They can easily fit in any size air basket.

Recommended Equipment

  • Air Fryer
  • Silicone Baking Cups– I love silicone baking cups. They are easy to clean and reuse and you never have to worry about anything sticking to them.

How To Make Air Fryer Blueberry Muffins

(More detailed directions below.)

  1. Whisk together the dry ingredients in a small bowl.
  2. Whisk together the wet ingredients and lemon zest in a medium bowl.
  3. Gradually stir the dry ingredients into the wet ingredients and add the blueberries.
  4. Fill the silicone baking cups.
  5. Air Fry.

Air Fryer Cooking Times

Air Fryers cook at different rates so use the cooking time as an estimate and check a few minutes early.

Storage

Can be kept in an airtight container like this muffin keeper at room temperature for 2 to 3 days or you can freeze them for up to 2 months. But since this recipe makes a small batch, it is unlikey you will have many leftovers.

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

  • 1/4 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 3/4 cup fresh blueberries

Instructions

  • Whisk first 5 ingredients together in a small bowl.
    Whisk egg, milk, melted butter, vanilla extract, and lemon zest together in medium bowl.
  • Gently stir in blueberries.
  • Fill silicone muffin cups 2/3 full with batter.
  • Air fry for 12 minutes.
