Air Fryer Boursin Stuffed Chicken

Air Fryer Boursin Stuffed Chicken is wrapped in bacon and only takes 25 minutes to air fry. The creaminess from the boursin cheese and the crispy, salty bacon wrapped around the outside makes for a wonderfully flavored chicken breast.

In addition to boursin cheese, I also like to stuff these chicken breasts with a few spinach leaves and some sun-dried tomatoes. So delicious!

This recipe makes 2 servings. If you need more, you will either need a large air fryer basket, or you will need to cook in batches. The chicken breasts should not be touching. You want room for the air to circulate around them.

I love to use boursin cheese to stuff meat. It is wonderfully rich and creamy and full of flavor. For this recipe, I like to use Garlic and Herbs flavor, but Shallot and Chive works well too.

How To Make Air Fryer Boursin Stuffed Chicken

  • Prepare the chicken. Either butterfly the chicken or pound it out in an even layer. Lightly season both sides with salt and pepper.
  • Stuff the chicken. Spread a thin layer of boursin cheese on top of each chicken breast. You can use more if you want but I think a thin layer is plenty. Top with some baby spinach leaves and sun-dried tomatoes. Roll up the chicken.
  • Wrap with bacon. Wrap each chicken breast with 2 slices of bacon and secure with toothpicks. Also secure the open ends with toothpicks so the boursin cheese doesn’t leak out.
  • Air Fry. Preheat air fryer for a few minutes at 350 degrees and then add chicken. Air fry 15 minutes and flip over. Air fry for another 10 to 15 minutes,

Let rest 5 to 10 minutes before serving.

Recipe Tips

  • Air fryer cooking times vary greatly so use the cooking time as an estimate. Chicken is done when it reaches an internal temperature of 165 degrees. An instant read thermometer is helpful. You don’t want to overcook the chicken. It will be dry and tough.

How To Serve

Goes great with roasted vegetables, a side salad with Creamy Balsamic Dressing or mashed potatoes. For a low carb meal just serve with veggies and a salad.

Materials

  • 2 boneless, skinless chicken breasts
  • salt and pepper
  • ½ (5.2-ounce) package boursin cheese
  • handful of baby spinach leaves
  • 1 tablespoon slivered sun-dried tomatoes
  • 4 bacon slices
  • toothpicks

Instructions

  • Either butterfly the chicken breasts or pound them to flatten them out.
    Season both sides with salt and pepper. Note: Go easy on the salt. The bacon will add quite a bit of saltiness.
  • Spread boursin cheese on one side of each chicken breast.
  • Top with fresh spinach leaves and sun-dried tomatoes.
  • Roll each one up and then wrap each chicken roll with 2 pieces of bacon. Secure with toothpicks.
    Pinch ends of chicken rolls together and secure with toothpicks. This will help keep the cheese from oozing out as it melts.
  • Preheat air fryer to 350 degrees.
    Add chicken to air fryer basket and air fry for 15 minutes. Flip over and air fry another 10 to 15 minutes.
    Chicken is done when it reaches an internal temperature of 165 degrees F.
  • Let rest 10 minutes and then serve.
