Air Fryer Cottage Cheese Egg Muffins are high in protein and only take 10 minutes to air fry. They are perfect for meal prep.

Materials

  • 6 large eggs
  • ½ cup cottage cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup crumbled feta cheese
  • 1 cup steamed broccoli, finely chopped
  • 2 tablespoons minced onion

Instructions

  • Place first 4 ingredients in a blender and blend for 20 seconds.
  • Pour mixture into a medium bowl and add remaining ingredients
  • Spoon egg mixture into 10 silicone cups that have been lightly sprayed with cooking spray.
  • Air fry at 320 degrees for 9 to 11 minutes or until set.
    Air fry in batches if necessary. You want room for the air to circulate arund each one.
