What I Love About Air Fryer Frittatas

  • Frittatas made in the air fryer are super easy to customize. I’ve used zucchini, broccoli, mushrooms. and onion but you can use any veggies you like. Instead of goat cheese, you can use feta cheese or Parmesan cheese.
  • Great for small servings. This frittata serves 2 to 3 people so it works well for small families or people who just cook for themselves.
  • Wonderful texture. The high heat on top turns browns the top of the frittata but the inside stays wonderfully moist.
  • Quick and Easy. Once the veggies are roasted, it only takes 10 to 14 minutes to air fry.

How To Make Air Fryer Roasted Vegetable Frittata

  • Air Fry the vegetables. Coat with oil, season with salt, pepper, and garlic powder. Air fry for 6 minutes. Let cool. (This step can be done a day or two in advance.
  • Whisk together frittata mixture. Whisk eggs and heavy cream and season to taste and add thyme. Stir in veggies.
  • Prepare pan. Transfer to a pan that has been sprayed with cooking spray. Sprinkle goat cheese on top.
  • Air Fry. Air fry for 10 to 14 minutes at 360 degrees.

Easily Customizable

There are so many ways you can customize this frittata to suit your tastes and to use what you have on hand.

  • Change the cheese. Feta, Parmesan or cheddar work well.
  • Change the seasoning. Use rosemary or oregano instead of thyme.
  • Add cooked crumbled bacon or sausage for extra flavor.

Air fryer cooking times vary so use the air frying time as an estimate and check early.

Size of Pan To Use

You will need a 6 to 7-inch metal cake pan. This is the one that I use.

Make Ahead

The vegetables can be air fried a day or two in advance and stored in an air tight container in the refrigerator.

How To Serve

This veggie frittata is great served with sliced avocado, fruit, and toast. If you like spicy food, serve it with some hot sauce.

Storage

Leftovers will keep for 3 to 4 days in an airtight container in the refrigerator.

Materials

  • ½ cup diced zucchini or bell pepper
  • ½ cup small broccoli florets
  • 3 mushrooms, sliced
  • ¼ diced onion
  • 1 tablespoon olive oil
  • salt, pepper, and garlic powder
  • 4 large eggs
  • 2 tablespoons heavy cream
  • ¼ teaspoon dried thyme
  • 2 tablespoons crumbled goat cheese
  • chopped fresh parsley

Instructions

  • Place zucchini, broccoli, mushrooms, and onion in a bowl. Drizzle with the olive oil. Use your hands to make sure the veggies are evenly coated.
    Season to taste with salt, pepper, and garlic powder.
  • Preheat air fryer to 400 degrees. Add veggies and air fry for 6 minutes. Let cool.
  • Meanwhile whisk together eggs and heavy cream in a medium bowl. Season to taste with salt and pepper and add thyme.
  • Spray a 6 to 7-inch metal cake pan with cooking spray.
  • Once veggies have cooled a little, add them to the egg mixture. Pour into prepared pan.
  • Scatter crumbled goat cheese on top.
  • Air fry at 360 degrees for 10 to 14 minutes.
  • Sprinkle with parsley and serve.
