This chicken has so much flavor. I love making stuffed chicken and I have made a bunch of different variations. You’ll also want to try Air Fryer Boursin Stuffed Chicken, Tuscan Stuffed Chicken, and French Onion Stuffed Chicken.

A pocket is made in each chicken breast and the pockets are coated with Dijon mustard just like you would coat the bread with mustard when making a ham and cheese sandwich. The pockets are filled with ham and cheese. The chicken is dipped in an egg wash and then coated with breadcrumbs. The breadcrumbs form a crispy coating in the air fryer with just a minimal amount of oil.

Air Fryer Ham and Cheese Stuffed Chicken Recipe Tips

  • It helps to secure the filling inside with a few toothpicks.
  • Press the majority of the cheese into the back of the pocket to help prevent it from oozing out.
  • Use uniform sized chicken breasts so that they cook evenly.
  • Be careful when cutting the pockets in the chicken breasts so you don’t cut all the way through. I think a sharp paring knife works really well to cut the pockets.
  • Don’t overcook the chicken. Chicken is done when it reaches an internal temperature of 165 degrees. The chicken will be dry and tough if you overcook it. Use the cooking time as an estimate. It should take roughly 18 to 22 minutes at 360 degrees, but it can take longer if your chicken breasts are really large.
  • If your air fryer requires preheating then preheat it for a few minutes.

Variations and Substitutions

  • Use a spicy or Creole mustard instead of Dijon.
  • Make it spicy. Add a little cayenne pepper to the Dijon sauce.
  • Use a different cheese. Gruyere, cheddar, American, Havarti, and mozzarella are all good choices.
  • Make it Gluten-Free. Use gluten-free breadcrumbs or use crushed pork rinds.
  • Add extra flavor. Season the chicken with Cajun seasoning, paprika, or garlic powder for a little extra flavor. Dried thyme would also be delicious.

This chicken dish goes great with Lemon Butter Broccoli, a garden salad with Creamy Italian Dressing, and some Parmesan Rice.

Equipment

Materials

  • 2 boneless, skinless chicken breasts
  • 2 teaspoons Dijon mustard
  • salt and pepper
  • 2 slices Swiss cheese
  • 2 to 4 slices deli ham
  • 1 large egg
  • 1 cup dry breadcrumbs

Dijon Sauce

  • 2 tablespoons Dijon mustard
  • cup heavy cream
  • 1 tablespoon freshly grated Parmesan cheese

Instructions

  • Cut a pocket in each chicken breast. Spread a teaspoon of mustard in each pocket.
    Season the inside and outside of chicken with salt and pepper.
  • Stuff ham and cheese into each pocket. Secure the pockets with a few toothpicks.
  • Whisk egg together with a tablespoon of water in a shallow bowl.
    Place breadcrumbs in a shallow dish.
  • Dip both sides of chicken in egg wash and then press breadcrumbs into both sides.
    Spray air fryer basket with oil and place chicken in basket. Spray top of chicken with oil.
  • Air fry at 360 degrees for 18 to 22 minutes. Halfway through, flip over and spray with more oil.
  • To make sauce, combine all ingredients in a microwave-safe bowl and microwave for 30 seconds. Stir well.
  • Drizzle sauce over chicken and serve.
