Air Fryer Ham and Cheese Stuffed Chicken has a gooey ham and cheese filling and is coated in a simple creamy Dijon sauce. This recipe makes 2 servings but can easily be doubled.

- 2 boneless, skinless chicken breasts
- 2 teaspoons Dijon mustard
- salt and pepper
- 2 slices Swiss cheese
- 2 to 4 slices deli ham
- 1 large egg
- 1 cup dry breadcrumbs
Dijon Sauce
- 2 tablespoons Dijon mustard
- ⅓ cup heavy cream
- 1 tablespoon freshly grated Parmesan cheese
Cut a pocket in each chicken breast. Spread a teaspoon of mustard in each pocket. Season the inside and outside of chicken with salt and pepper. Stuff ham and cheese into each pocket. Secure the pockets with a few toothpicks.
Whisk egg together with a tablespoon of water in a shallow bowl.Place breadcrumbs in a shallow dish. Dip both sides of chicken in egg wash and then press breadcrumbs into both sides.Spray air fryer basket with oil and place chicken in basket. Spray top of chicken with oil. Air fry at 360 degrees for 18 to 22 minutes. Halfway through, flip over and spray with more oil.
To make sauce, combine all ingredients in a microwave-safe bowl and microwave for 30 seconds. Stir well.
Drizzle sauce over chicken and serve.
