Air Fryer Mediterranean Vegetables

Air Fryer Mediterranean Vegetables are air fried until crispy and then sprinkled with a little feta cheese. Makes a wonderfully healthy side dish for just about any meal.

The vegetables are tossed with olive oil and seasonings and have so much flavor. I love how quickly vegetables cook in the air fryer and how crispy they get. So quick and easy to make.

Ingredient Notes

  • Vegetables– I use zucchini, red potatoes, mushrooms, eggplant, and bell pepper, but you can omit any of these or use other veggies such as asparagus, onion, carrots, broccoli, or cauliflower.
  • Seasonings– I use a mixture of dried herbs, but you could use dried Italian seasoning or Greek seasoning. Dried herbs work really well in the air fryer because you don’t have to worry about them burning like you do with fresh herbs. If you want fresh herb flavor, you can sprinkle some chopped fresh herbs on at the end.
  • Cheese– Instead of using feta cheese, you could use goat cheese or Parmesan cheese.

Air Fryer Mediterranean Vegetables Recipe Tips

  • Be sure to cut the potatoes smaller than the other vegetables since they take longer to cook.
  • When cooking at high heat, plain olive oil should be used rather than extra-virgin olive oil.
  • The cherry tomatoes need to be added towards the end of the cooking time because they only take a few minutes to cook.

Variations and Substitutions

  • Any vegetables can be used in this recipe. Try coarsely diced onion, broccoli or cauliflower florets, yellow squash instead of zucchini, or asparagus spears that have been cut into 3-inch pieces.
  • Mix in some chopped kalamata olives or sun-dried tomatoes at the end of cooking.

How To Serve

These air fryer vegetables make a great side for Healthy Grilled Greek Chicken. Leftovers make a great omelet filling.

Equipment

Materials

  • 1 small zucchini sliced
  • 1 cup quartered mushrooms
  • 4 small red potatoes, cut into ½-inch pieces
  • ½ small eggplant cubed
  • ½ bell pepper cut into 1-inch pieces
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 tablespoons olive oil
  • ½ teaspoon paprika
  • 1 teaspoon mixed dried herbs (thyme, oregano, basil, rosemary)
  • 1 cup cherry tomatoes
  • ¼ cup crumbled feta cheese
  • chopped fresh parsley

Instructions

  • Add the vegetables, except tomatoes to a large bowl.
  • Drizzle with olive oil and sprinkle with paprika, mixed herbs, salt and pepper. Stir to evenly coat the veggies.
  • Transfer to air fryer basket. Do not crowd the basket. Work in batches if necessary.
  • Air Fry at 380 for 10 minutes. Shake the basket after 5 minutes.
  • Add the tomatoes and air fry another 3 to 5 minutes.
  • Sprinkle with feta cheese and parsley and serve.

Notes

For the mixed herbs, you can use any 2  or you can use dried Greek seasoning.
