- ½ cup diced zucchini or bell pepper
- ½ cup small broccoli florets
- 3 mushrooms, sliced
- ¼ diced onion
- 1 tablespoon olive oil
- salt, pepper, and garlic powder
- 4 large eggs
- 2 tablespoons heavy cream
- ¼ teaspoon dried thyme
- 2 tablespoons crumbled goat cheese
- chopped fresh parsley
Place zucchini, broccoli, mushrooms, and onion in a bowl. Drizzle with the olive oil. Use your hands to make sure the veggies are evenly coated. Season to taste with salt, pepper, and garlic powder. Preheat air fryer to 400 degrees. Add veggies and air fry for 6 minutes. Let cool.
Meanwhile whisk together eggs and heavy cream in a medium bowl. Season to taste with salt and pepper and add thyme.
Spray a 6 to 7-inch metal cake pan with cooking spray.
Once veggies have cooled a little, add them to the egg mixture. Pour into prepared pan.
Scatter crumbled goat cheese on top.
Air fry at 360 degrees for 10 to 14 minutes.
Sprinkle with parsley and serve.
