What I Love About This Recipe

How To Serve Air Fryer Lemon Mug Cakes
Serve warm or at room temperature with fresh whipped cream or Cool Whip. Some raspberries or strawberries go nicely with it.

Recipe Tips
- Be sure to use oven-safe mugs. If you don’t have any, you can use small ramekins.
- To easily juice lemons heat them in the microwave for 20 seconds. This gets the juices flowing. Then roll them on the counter. This damages the membranes, making it easier for the juice to release.

Air Fryer Cooking Times Vary
- Use the air frying time as an estimate. Different air fryers cook at different rates. Use the toothpick test. Insert a toothpick in the center and if it comes out clean, it is done. It’s ok to undercook this mug cake a little. The texture of the middle will be wonderfully soft and a little gooey if undercooked.

Air Fryer Lemon Mug Cakes
Equipment
Materials
- ½ cup all-purpose flour
- ¼ cup granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon lemon zest
- ½ cup milk
- ¼ cup vegetable oil
- 2 tablespoons lemon juice
- 2 teaspoons vanilla extract
- 1 heaping tablespoon lemon curd
- Cool Whip and Raspberries for serving optional.
Instructions
- Place first 4 ingredients in a mixing bowl and whisk together.
- Add Lemon zest, milk, vegetable oil, lemon juice, vanilla extract, and lemon curd. Stir until mixed together.
- Spray 2 small mugs with cooking spray. Divide the batter evenly between the 2 mugs.
- Preheat air fryer at 350 for a few minutes.Place the mugs in the air fryer basket.
- Air fry for 6 to 10 minutes.
- Top with Cool Whip and a raspberry if desired.
