- ½ cup all-purpose flour
- ¼ cup granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon lemon zest
- ½ cup milk
- ¼ cup vegetable oil
- 2 tablespoons lemon juice
- 2 teaspoons vanilla extract
- 1 heaping tablespoon lemon curd
- Cool Whip and Raspberries for serving optional.
Place first 4 ingredients in a mixing bowl and whisk together.
Add Lemon zest, milk, vegetable oil, lemon juice, vanilla extract, and lemon curd. Stir until mixed together.
Spray 2 small mugs with cooking spray. Divide the batter evenly between the 2 mugs.
Preheat air fryer at 350 for a few minutes.Place the mugs in the air fryer basket. Air fry for 6 to 10 minutes.
Top with Cool Whip and a raspberry if desired.
