Materials

  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon lemon zest
  • ½ cup milk
  • ¼ cup vegetable oil
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla extract
  • 1 heaping tablespoon lemon curd
  • Cool Whip and Raspberries for serving optional.

Instructions

  • Place first 4 ingredients in a mixing bowl and whisk together.
  • Add Lemon zest, milk, vegetable oil, lemon juice, vanilla extract, and lemon curd. Stir until mixed together.
  • Spray 2 small mugs with cooking spray. Divide the batter evenly between the 2 mugs.
  • Preheat air fryer at 350 for a few minutes.
    Place the mugs in the air fryer basket.
  • Air fry for 6 to 10 minutes.
  • Top with Cool Whip and a raspberry if desired.
