Ingredients Needed

  • Chicken Breasts– chicken thighs can be used instead.
  • Cherry or grape tomatoes
  • Fresh Garlic
  • Balsamic Vinegar
  • Fresh Thyme and dried Italian seasoning
  • Fresh Mozzarella
  • Optional Add-Ins– a little Parmesan cheese, fresh basil, crushed red pepper flakes.

How To Make Air Fryer Chicken with Cherry Tomatoes and Garlic

  • Cook the tomatoes and garlic. Drizzle the tomatoes and garlic with oil and balsamic vinegar, season with salt and pepper and air fry 8 to 10 minutes. Add the thyme after 5 minutes (You don’t want to add it at the beginning because it might burn)

  • Prepare the chicken. While the tomatoes are cooking prepare the chicken. Pat it dry and season it.
  • Air fry the chicken. Transfer the tomatoes and garlic to a plate. Air fry the chicken at 360 degrees for 16 to 18 minutes, flipping it over halfway through.

  • Add mozzarella. Top the chicken breasts with mozzarella and air fry for 1 to 2 minutes to melt the cheese. Note: You can add the tomatoes and garlic back to the air fryer at this point to warm them.

How To Serve

Serve with a side salad or steamed asparagus or broccoli for a deliciously healthy low carb meal or serve with some orzo or pasta with some crusty fresh bread.

Recipe Tips

  • Let the chicken rest for 5 minutes before serving.
  • For extra flavor, drizzle with a little more balsamic vinegar before serving. Use a high-quality aged balsamic vinegar for best flavor which will have more sweetness than a cheaper one.

Storage

Leftovers will keep for 3 days in an airtight container in the refrigerator Warm in a 350 degree oven for 2 to 3 minutes.

Equipment

Materials

  • 3 cups cherry tomatoes
  • 6 garlic cloves lightly smashed
  • 1 tablespoon olive oil
  • salt and pepper
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon fresh thyme leave or two sprigs
  • 3 boneless skinless chicken breasts
  • ½ teaspoon Italian seasoning
  • 4 ounces mozzarella cut into slices

Instructions

  • Place tomatoes and garlic in a bowl. Drizzle with olive oil and balsamic vinegar and season to taste with salt and pepper.
  • Transfer to air fryer basket. Air fry at 400 degrees for 8 to 10 minutes. After 5 minutes, shake basket and add thyme.
  • Meanwhile pat chicken dry with paper towels and season chicken with salt and pepper, and Italian seasoning.
  • Transfer tomatoes and garlic to a serving plate.
    Place chicken in air fryer. Air fry at 360 degrees for 16 to 20 minutes, flipping chicken over halfway through.
  • Place mozzarella slices on top of chicken and air fry another 1 to 2 minutes.
  • To serve, top chicken with tomatoes and garlic.

Notes

If chicken breasts are really large, either pound them out some of cut them in half horizontally to make 2 thinner pieces.
Note: The prep time is short because most of the prep can be done during the cooking time.
