- 3 cups cherry tomatoes
- 6 garlic cloves lightly smashed
- 1 tablespoon olive oil
- salt and pepper
- 2 teaspoons balsamic vinegar
- 1 teaspoon fresh thyme leave or two sprigs
- 3 boneless skinless chicken breasts
- ½ teaspoon Italian seasoning
- 4 ounces mozzarella cut into slices
Place tomatoes and garlic in a bowl. Drizzle with olive oil and balsamic vinegar and season to taste with salt and pepper.
Transfer to air fryer basket. Air fry at 400 degrees for 8 to 10 minutes. After 5 minutes, shake basket and add thyme.
Meanwhile pat chicken dry with paper towels and season chicken with salt and pepper, and Italian seasoning.
Transfer tomatoes and garlic to a serving plate.Place chicken in air fryer. Air fry at 360 degrees for 16 to 20 minutes, flipping chicken over halfway through. Place mozzarella slices on top of chicken and air fry another 1 to 2 minutes.
To serve, top chicken with tomatoes and garlic.
If chicken breasts are really large, either pound them out some of cut them in half horizontally to make 2 thinner pieces.
Note: The prep time is short because most of the prep can be done during the cooking time.
