Air Fryer Soy Glazed Eggplant
Air Fryer Soy Glazed Eggplant is the most delicious eggplant and super easy to make in an air fryer. It has a wonderful salty, garlicky glaze with a little sweetness. It goes great with Grilled Teriyaki Chicken or Asian Garlic Tofu.

Ingredients
- 2 medium eggplant
- Olive oil or Avocado oil
- Soy Sauce
- Granulated sugar– the sugar helps cut the bitterness in the eggplant.
- Garlic
- Chili oil– I use Trader Joe’s Chili Onion Crunch. You can also drizzle it over the finished dish for extra flavor.

How To Make Air Fryer Soy Glazed Eggplant
- Prepare the eggplant. Cut the eggplant into thick slices and then make shallow cuts in the top of each slice. This will allow the glaze to seep down into the eggplant and flavor it more.
- Mix together the glaze ingredients.
- Preheat air fryer and prep eggplant. Preheat air fryer to 350 degrees and then spray basket with oil. Add eggplant in a single layer and brush with glaze.
- Air fry. Air fry for 12 to 15 minutes, brushing with glaze about halfway through.
Tips For Picking Eggplant
Choose small to medium-sized eggplant that are firm and without any soft spots. The skin should be smooth and shiny. Small to medium-sized eggplant have fewer seeds and taste less bitter. Eggplant are very perishable. Plan to cook them within several days of purchase. If they are very fresh, you can get away with a few more days.

Recipe Tips
- Arrange the eggplant in a single layer. Air fry in batches if necessary.
- No need to flip the eggplant.
- You want to cut the eggplant fairly thick, about 3/4 to 1-inch thick.
Air Frying Cooking Times Vary
Use the air fryer cooking time as an estimate. Different air fryers cook at different rates. It should be done in 12 to 15 minutes, but if your slices are really thick it could take longer than 15 minutes to get soft.
Storage
Leftovers will keep in an airtight container in the refrigerator for 4 days.

Instructions
- Slice eggplant into ¾ to 1-inch slices.Make shallow cuts across the top of each eggplant slice.
- In a small bowl, stir together oil, soy sauce, sugar, garlic and chili oil. Add black pepper to taste.
- Preheat air fryer to 350 degrees. Spray air fryer basket with oil. Place eggplant slices in a single layer in air fryer basket. Brush the tops with glaze.
- Air fry for 12 to 15 minutes, brushing with more glaze halfway through.
