Air Fryer Soy Glazed Eggplant is the most delicious eggplant and super easy to make in an air fryer. It has a wonderful salty, garlicky glaze with a little sweetness.

Equipment

Materials

  • 2 medium eggplants
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons soy sauce
  • tablespoons granulated sugar
  • 2 garlic cloves, minced
  • teaspoons chili oil
  • black pepper

Instructions

  • Slice eggplant into ¾ to 1-inch slices.
    Make shallow cuts across the top of each eggplant slice.
  • In a small bowl, stir together oil, soy sauce, sugar, garlic and chili oil. Add black pepper to taste.
  • Preheat air fryer to 350 degrees. Spray air fryer basket with oil. Place eggplant slices in a single layer in air fryer basket. Brush the tops with glaze.
  • Air fry for 12 to 15 minutes, brushing with more glaze halfway through.

Notes

The shallow cuts will help the eggplant cook more evenly and they create space for the glaze to seep into.
