Materials

Batter

  • ¾ cup plus 2 tablespoons all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup packed light brown sugar
  • 2 tablespoons Vegetable oil
  • 1 tablespoon applesauce
  • cup milk
  • ½ teaspoon vanilla extract
  • cup finely diced peeled apple

Streusel

  • ¼ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • pinch of salt
  • 2 tablespoons butter, softened

Glaze

  • cup powdered sugar
  • ½ tablespoon milk

Instructions

  • Whisk together first 5 ingredients in a medium bowl and set aside.
  • In a separate medium bowl, whisk together sugar, oil, applesauce, milk, and vanilla.
  • Add the dry ingredients to the wet and stir with a spatula just until combined.
Add apples and stir them in.
  • Transfer to a greased pan that will fit in your air fryer. I use a 7-inch round cake pan. You could also use an 8x4-inch loaf pan.
  • For the streusel, combine flour, sugar, cinnamon and salt in a small bowl. Add the butter and mix it in with a fork. Sprinkle on top of batter.
  • Air fry at 320 degrees for 14 to 20 minutes.
  • Mix together glaze in a small bowl. Let the coffee cake cool some and then drizzle the glaze on top.

Notes

I find there's no need to preheat my air fryer when baking in it. If your air fryer requires pre-heating, go ahead and do it.
Finding the correct baking time can be a little tricky when baking in an air fryer. It can vary greatly based on the brand and size of your air fryer and the size of the pan you use.
Unlike the oven, it is ok to check frequently. The air fryer won't lose much heat and will quickly get back to the correct temperature.
