Sweet Potato and Broccoli Farro Bowls
These Air Fryer Sweet Potato and Broccoli Farro Bowls are a delicious, healthy, and satisfying meal that is packed with wholesome ingredients and plenty of flavor. Creamy Lemon Dressing
- ¼ cup plain Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon honey
- ½ teaspoon za-atar
- salt and pepper
Farro Bowls
- 1 cup farro
- 1 medium sweet potato, peeled and cut into small cubes
- 3 cups broccoli florets
- 1½ tablespoons olive oil
- salt and pepper
- ½ small red onion, sliced
- ½ medium avocado, sliced
- 2 tablespoons pepitas or sunflower seeds
Make Creamy Lemon Dressing. In a small bowl, whisk all ingredients together. Refrigerate until needed.
Cook farro according to package directions.
Place sweet potatoes in a bowl. Drizzle with ½ tablespoon of olive oil and stir to evenly coat. Season with salt and pepper.Place in air fryer basket on one side.Add broccoli to the bowl and drizzle with remaining olive oil. Use you hands to work it in evenly. Season with salt and pepper.Add broccoli to the air fryer basket keeping it separate from the sweet potato. Air fry at 350 for 7 to 8 minutes. The broccoli will probably be done. Remove it from the air fryer and continue to cook the sweet potatoes for another 2 to 5 minutes.
Divide farro between 2 bowls. Top with broccoli and sweet potato. Add red onion, and sliced avocado. Drizzle with dressing and sprinkle with pepita seeds.
